Simple Masala Pasta Indian Recipe

Ingredients
- 1 cup pasta
- 1 tablespoon oil
- 1/2 onion chopped
- 2 cloves garlic minced
- 1 teaspoon ginger minced
- 1 green chili chopped (optional)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- 1 cup tomato puree
- 1/2 cup water
- 1/2 cup chopped vegetables carrots, beans, peas, etc.
- 1/4 cup chopped cilantro
Instructions
- Cook the pasta according to the package directions, about 10 minutes.
- Heat the oil in a pan over medium heat.
- Add the onion, garlic, and ginger and cook until softened, about 5 minutes.
- Add the green chili (if using) and spices and cook for 1 minute more.
- Add the tomato puree and water and bring to a boil.
- Reduce heat to low and simmer for 10 minutes.
- Add the cooked pasta, vegetables, and cilantro and stir to combine.
- Cook until heated through, about 2 minutes more.
Notes
You can use any type of pasta you like for this recipe.
If you don’t have fresh vegetables, you can use frozen vegetables instead.
Adjust the amount of spices to your liking.
Serve the masala pasta hot with your favorite toppings, such as grated Parmesan cheese or chopped fresh basil.
